Bacon and Ham Fried Rice



Ingredients

  • 50g Smoked Bacon slices, chopped
  • 50g Canadian Bacon slices, chopped
  • 50g Sweeet ham, chopped
  • 50g holiday ham, chopped
  • 50g luncheon meat, chopped
  • Frozen Mixed Veggies (Corn, Green Peas, Carrots)
  • 1 small onion, peeled and chopped
  • 2 cloves garlic, peeled and minced
  • 2 tablespoons soy sauce
  • 1/2 cup green onions, chopped
  • salt and pepper to taste
  • 2 eggs, lightly beaten


How to cook?

  1. In a bowl, break cold rice to separate grains.
  2. In a wok or wide skillet over high heat, add smoke and Canadian bacon. Cook and stirring regularly until it begins to brown and crisp.
  3. When bacon begins to render fat, add onions and cook until translucent. Add garlic until golden brown.
  4. Add frozen mixed veggies and mix well until cooked.
  5. Add luncheon meat, Sweeet ham, and holiday ham
  6. Add rice and cook, mix well repeatedly a few times until rice is heated through.
  7. Add soy sauce and green onions and stir to combine. Season with salt and pepper to taste.
  8. Make a large well in the middle of the rice and add eggs. Allow eggs to set for about 30 seconds and then scramble with the spoon. Stir into the rice.
  9. Remove the rice from the pan and garnish with green onions. Serve hot.
